The signature dish,Shinjiko Shijimi Chuka Soba <Shio> is a masterpiece crafted with a generous amount of shijimi clams, delivered fresh from Lake Shinjiko in Shimane Prefecture. This bowl is packed with succinic acid, the natural flavorful component of shijimi.
The golden-hued broth, which brings out the best of the shijimi, perfectly balanced with a sharp yet harmonious shio tare (salt sauce) that enhances the flavor to its fullest.
In order to bring out the rich flavor of shijimi, no chemical seasonings are used. Every element—from the broth to the shio tare and flavored oil—is infused with the essence of shijimi, delivering a truly one-of-a-kind ramen experience.
